All beef pricing includes butcher fees and delivery to your door ( Southside of Chicago and nearby suburbs).

HOW MUCH DO I GET?

Please keep in mind these numbers are all estimates due to the varying size of the animal. A full size cow will be approx.. 1200lbs. You will be billed (everything included) by the carcass weight. The carcass weight of a 1200lb cow will be approx.. 700lbs. Out of this the final yield of meat will depend on the different cuts the butcher does. Generally there is a 25 to 30% “Cutting Loss” from the carcass to the finished product.

We can sell portions from a whole all the way down to an eighth of a cow. If you buy a quarter or more you can speak directly to the butcher and request the cuts of meat you want. If you buy an eighth you will get the most common cuts.

Common cuts include but are not limited to: Porter House steak, Round steak, T-Bone steak, Sirloin steak, Ribeye steak, several roasts, Short ribs, ground beef, and stew meats. Also available upon request one tongue, liver and oxtail.
